Mexican Flag Enchiladas

Three corn-tortilla enchiladas served trio-style: one white enchilada filled with cheese and topped with cream sauce, one green enchilada filled with chicken and topped with green tomatillo sauce, and one red enchilada filled with shredded beef and topped with classic enchilada sauce. Finished with melted jack and cheddar cheese. Served with Spanish-style rice and our house refried beans made without lard and with zero trans fats.
